Eucalyptus honey is mainly produced from two distinct species of the plant: Eucalyptus Camaldulensis (which blooms in July-August) and Eucalyptus Occidentalis (which blooms in September). Honey produced in summer turns out to be lighter in color and milder in taste, while honey produced in September has more pronounced characteristics. Eucalyptus honey belongs to the group of very aromatic honeys with intense aroma reminiscent of licorice. The crystallization is fine and compact, very pleasant to the palate. The Eucalyptus plant is native to Australia and was introduced to Italy in the 19th century for reforestation in Mediterranean environments. The specification Camalulensis comes from the name of the Conce of Camaldoli who in 1832 made available an estate where the first specimens imported to Italy began to be cultivated. Smell: of dried, caramelized mushrooms. Taste: Slightly sweet, toffee-like, licorice-like.
